Marc Grossman – i.e. Bob – may not have formal culinary training, but he has proven to be a genius in introducing new American traditions to the Paris scene. He’s curated his favorite tastes, yet refined with quality ingredients and extra care. Credited for bringing green juice and Californian healthy eating to the city, he takes Americana one step further with his modern take on the 50s diner, set in a mixed-used reclaimed SNCF warehouse named Halle Pajol. (Yeah, it’s basically like Brooklyn.) If the weather is nice, grab a spot on terrace, the industrial neighborhood is unexpected.
Devotees track out to the edge of Paris (18eme) to experience dense wedges of New York-style cheesecake, gluten free chocolate cake, and caramel-like pecan pie that highlight the honest-to-goodness, homestyle recipes. But you would be amiss to ignore Bob’s standby pressed juice in shades of green and the assortment of homemade bagels topped with your choice of salmon, sprouts, grilled carrot, or avocado. Nothing beats a hot-out-of-the-oven chewy bagel – and Bob’s is Paris’s best.
